Simple Red Beans and Rice

We’re all about simple dinners in this house.  After a full day at work, I’m not really in the mood for an elaborate dinner, so quick and easy wins every time.

Really, who doesn’t love red beans and rice?  It’s one of Hubs’ favorite dishes, so a few months ago I got brave and made up my own recipe.  Use it as your own and enjoy!

You’ll need:

-two cans of red beans (kidneys, red beans, whatever you have on hand.  Feel free to mix ’em too)

-Creole seasoning (Tony Chachere’s is my go-to) to taste

-Garlic powder to taste

-Onion powder to taste

-1 pound of sausage

Mix all of your ingredients together in a large pot and let it simmer for 20-30 minutes over medium-low heat.  Serve over rice.  Ta-da!  Done!

Could you use real garlic, onion, and all of that fancy stuff?  Sure.  I just don’t care to do that much work.  I usually just dump everything in the pot, turn it on “4” on my stove and let it simmer until we’re ready for dinner (sometimes an hour or more).  And this freezes beautifully if you have any leftovers!
