Mut’s Favorite Meatloaf

I’m not really sure why, but everyone called my Granddaddy “Mut”.  Well, everyone but me and my sister.  He was Granddaddy to us.

And going through my Grandmother’s recipes a few years back, I found one for “Mut’s Favorite Meatloaf”.  This was the top of the recipe card.  Adorable!

I don’t ever remember my grandmother making this.  Kids aren’t really ever fans of meat in the shape of a loaf.  Oh, who am I kidding?  I’m an adult and I’m not a fan of that!

So taking a page from the Pioneer Woman’s book, I made meatballs!  And homemade mac n cheese, buttermilk biscuits, and green beans.  Comfort food at it’s finest.  And for the record, Hubs ate two servings and the leftovers so apparently they’re aren’t too bad.  In my book, going back for seconds = success!

Here’s the recipe.

-1 lb ground beef

-2 eggs, beaten

-2 slices whole wheat bread, toasted and torn into tiny pieces

-2-4 tbsp ketchup

-1/4 c warm water

-1 tsp Mrs Dash seasoning

-salt

-3 tbsp diced onion

Mix all ingredients in a large bowl.  Shape into meatballs (I made 6 big meatballs).  Place in foil-lined 13×9″ pan and bake at 350*F for an hour.
