This is one of the best breakfasts I’ve ever made. My all-time favorite would be french toast, of course, but this is a great one for hurried mornings. And hurried husbands. Plus, it’s actually pretty healthy and definitely easy to make!
What you’ll need:
5 cups old fashioned oats (not quick cooking)
1 cup applesauce (natural no sugar added)
1 banana, mashed
1/2 cup honey
1/2 to 1 cup peanut butter (depending on how much you like)
1 tsp vanilla extract
1 tsp cinnamon
1 cup milk (more if too dry)
What you’ll do:
Mash the banana. Add applesauce, honey, egg, peanut butter, and vanilla. Mix well. Add oats and milk. Mix until fully combined. Drop by ice cream scoop full into lined muffin tins. Bake at 350*F for around 30 minutes.
I like to top these with walnuts for a little extra oomph (like in the picture above). I’ve also mixed fresh blueberries into the mix and topped them with dried cranberries, too!
These can be stored for about a week in the fridge (covered with foil) and can be frozen in an airtight container for up to 3 months.
