Happy Pound Cake Day

It really is!  National Pound Cake Day.  How did I not know about this amazing holiday until just today? ‘Tis sad to think about wasting years without celebrating…

Lucky for you, though, I have a great pound cake recipe from my grandmother on my Dad’s side.

Buttermilk Pound Cake

Make this. Tonight. Trust me.

Earlene’s Buttermilk Pound Cake

You’ll Need:

3 cups sugar

1 cup shortening (2 sticks)

4 eggs

3 cups flour

1/2 tsp baking soda

1 cup buttermilk

1 tbsp water

1 tsp vanilla extract

1 tsp butter flavoring

1/2 tsp salt

How to make it:

Cream sugar and shortening; add eggs one at a time and mix well between each addition.  Combine flour, soda, and salt. Combine all liquid ingredients.  Alternate adding dry ingredients and liquid ingredients to the sugar/shortening mixture.  Blend well and pour into a loaf pan.  Bake at 350* for 20 minutes.  Lower temperature to 300* and bake for another hour or until a toothpick inserted into the center comes out clean.

P.s. Have all of the ingredients but no buttermilk?  No worries!  Get out your 1 cup measure and nearly fill it up with regular ol’ milk.  Add enough white vinegar to fill it up.  Let it sit for a few minutes.  Good to go!
