Salsa Chicken

You know you have that meal where you’ve made it so many times, you don’t even follow a recipe.  You don’t ever change things up because it’s always good.  This is that one for me.

Meet salsa chicken, your newest quick and easy dinner.

What you need:

1 can cream of mushroom soup (doesn’t taste as good with cream of chicken. trust)

1 lb chicken (cooked and shredded)

2 tbsp taco seasoning (or to taste)

1 can black beans, rinsed and drained

1 can petite diced tomatos, drained

1 can yellow corn, drained

1 cup shredded cheddar jack cheese

How to do it:

Mix first 5 ingredients together in large casserole dish.  Top with cheese.  Heat in 350* oven until cheese is melted and bubbly (about 15 minutes).  Serve over rice or tortilla chips.

I like to put the chicken and cream of mushroom soup in the crockpot on low for about 5-6 hours and then shred it and add the other ingredients.  Even easier!  Hope y’all enjoy!
